Egg Nog Pancakes

Instructions

  1. Heat griddle.
  2. In a medium bowl, stir together the flour, sugar, baking powder, baking soda, nutmeg, and salt.
  3. In another bowl, combine the egg nog, cottage cheese, milk, egg, butter or vegetable oil.
  4. Add to the flour mixture and stir until just moistened, but still slightly lumpy.
  5. Pour 1/4 cup batter onto a lightly oiled griddle.
  6. Cook 3 to 5 minutes

Makes 8 5-inch pancakes
