Mediterranean Style Salad with Cottage Cheese
- 1 1/2 cup iceberg lettuce, chopped
- 1 1/2 cup romaine lettuce, chopped
- 1 1/3 Tbl plum tomatos, seeded and diced
- 2 Tbsp pepper green, seeded and diced
- 2 Tbsp pepper red, seeded and diced
- 4 Calamata olives, seeded and quartered
- 1/8 cup red onion, chopped
- 1/8 cup mushrooms, sliced
- Salt and pepper, to taste
- 1/4 cup Kemps Cottage Cheese
- 1 Tbsp balsamic vinaigrette
- Place all ingredients except for vinaigrette and cottage cheese in a bowl. Toss well.
- Add vinaigrette and cottage cheese. Mix well.
Serving Suggestion: Serve the salad over a radicchio cup. Garnish with cracked black pepper and parsley or chive.
