Egg Nog Quik Bread

Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 cup Kemps Golden EggNog
  • 1/2 cup margarine or butter, melted
  • 1 tsp rum extract
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 1 tsp nutmeg

Instructions

  1. Heat oven to 350 F. Grease a 9x5-inch loaf pan.
  2. In a large bowl, beat eggs. Add sugar, Egg Nog, margarine (or butter), rum extract and vanilla extract, and blend well.
  3. In a small bowl, combine flour, baking powder, salt, and nutmeg. Stir.
  4. Add dry ingredients to Egg Nog mixture, and stir until dry ingredients are moistened. Do not over mix; batter will be slightly lumpy.
  5. Pour into greased pan. Bake for 40-45 minutes, or until toothpick inserted in center comes clean.
  6. Remove from pan, and let cool before serving.

Makes 1 Loaf
