Mediterranean Style Salad with Cottage Cheese


Ingredients

  • 1 1/2 cup iceberg lettuce, chopped
  • 1 1/2 cup romaine lettuce, chopped
  • 1 1/3 Tbl plum tomatos, seeded and diced
  • 2 Tbsp pepper green, seeded and diced
  • 2 Tbsp pepper red, seeded and diced
  • 4 Calamata olives, seeded and quartered
  • 1/8 cup red onion, chopped
  • 1/8 cup mushrooms, sliced
  • Salt and pepper, to taste
  • 1/4 cup Kemps Cottage Cheese
  • 1 Tbsp balsamic vinaigrette

Instructions

  1. Place all ingredients except for vinaigrette and cottage cheese in a bowl. Toss well.
  2. Add vinaigrette and cottage cheese. Mix well.

Serves 1

Serving Suggestion: Serve the salad over a radicchio cup. Garnish with cracked black pepper and parsley or chive.
