Red Pepper Cottage Cheese Mousse with Sweet Onion Relish

Ingredients

Mousse

  • 1, 12-ounce jar roasted red pepper
  • 3/4 cup Kemps Fat Free Cottage Cheese
  • 1 1/2 Tbsp hot water
  • 3/4 Tbsp gelatin
  • 1 tsp garlic, chopped
  • 2 Tbsp balsamic vinegar or to taste
  • 1 tsp tomato paste

Relish

  • 2 Tbsp Kemps Sour Cream
  • 1 tsp olive oil
  • 1/2 red onion, chopped
  • 1 clove garlic, chopped
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp minced fresh chives, chopped
  • 1 Tbsp orange marmalade

Instructions

Mousse

  1. Puree red pepper in food processor (or blender).
  2. Transfer to a small mixing bowl and heat puree in a double boiler until just warm.
  3. In small mixing bowl, whisk together water and gelatin. Let this sit, allowing gelatin to gel.
  4. Heat this mixture over double boiler to bring back to liquid form; then add to red pepper puree, along with tomato paste and vinegar.
  5. Season with salt and pepper to taste.
  6. Cool over an ice bath until mixture begins to gel.
  7. Fold the cottage cheese and sour cream into red pepper mixture until smooth.
  8. Then place into a mold, such as an 8-inch round cake pan that has been lined with plastic wrap.

Relish

  1. Heat the oil in medium skillet.
  2. Add onions and garlic and cook until tender.
  3. Add vinegar and salt and pepper to taste.
  4. Add marmalade and chives.
  5. Remove from heat. Cool in refrigerator.

Serves 10

Serving Suggestion: Place a wedge on a bed of greens and garnish with relish.
