Sour Cream and Cucumber Mint Dressing
- 1 cup Kemps Low Fat Sour Cream
- 1/4 tsp Minced garlic
- 1/2 cup peeled and seeded cucumber, chopped fine.
- 2 Tbsp minced fresh mint
- 3 Tbsp rice wine vinegar (or substitute balsamic vinegar)
- Salt and pepper, to taste
Whisk together all ingredients. Refrigerate until ready to use.
Makes 12 Servings
Serving Suggestion: excellent on a mixed green salad or vegetable salad. May also be used as a vegetable dip.
